Peppers – full of vitamins and low in calories
Peppers are low in calories and loaded with good nutrition. All varieties are excellent sources of vitamins A and C, potassium, folic acid and fiber. Peppers come in all sizes and colors. Some pack heat while others are sweet. You can get them fresh, frozen, dried or canned. Green peppers are harvested earlier, before they have a chance to turn yellow, orange and then red. Red peppers have the most nutrition with 1.5 times more vitamin C than green peppers.
Chili and Peperoni also belong to the family of peppers. The contained capsaicin has been shown to boost metabolism and improve circulation.
Cut peppers into rings or cubes with the Borner vegetable slicers. Peppers are versatile, add them to salads or stuff them with beef, bake and enjoy.
